BBQ Rub Base - House of Q

Suggested Beer Pairings: Amber Ale, Indian Pale Ale

Comments: BBQ sauce and amber ale is a perfect match for any type of meat. The sweetness in the sauce and the sweetness in the beer and roasted flavours will make the both the flavours in the food and in the beer distinct. Indian Pale Ale will match the aggressive spices on the tongue and at the same time allow a person to taste the stronger beers in stages, highlighting the floral notes and bitter finish in the beer.

Every bbq cook has his or her own special rub. This recipe is a base recipe and you can add whatever unique touches you want to it such as basil, oregano, rosemary, ginger, chili-powder, cinnamon, nutmeg, cayenne, different paprika's and so on. Just add small amounts at a time such as a teaspoon - you want to avoid any over-dominant flavour.

  • 1/2 cup White sugar
  • 1/2 cup Brown sugar
  • 1/4 cup Celery powder
  • 1/3 cup Granulated garlic
  • 1/4 cup Onion powder
  • 1/4 cup Course Salt - sea salt or kosher
  • 1/3 cup Seasoned salt - homemade or store bought
  • 1/3 cup Chili powder
  • 1/3 cup Course Ground Black pepper
  • 1/3 cup Paprika - Hungarian (sweet) or Spanish (usually more spicy)

Mix all together in a bowl or sift through a colander. Store in a dry place. Sprinkle on your choice bbq meats before smoking.
