Comments: BBQ rub and amber ale is a perfect match for any type of meat. The sweetness in the rub and the sweetness in the beer and roasted flavours will make the both the flavours in the food and in the beer distinct. Indian Pale Ale will match the aggressive spices on the tongue and at the same time allow a person to taste the stronger beers in stages, highlighting the floral notes and bitter finish in the beer.
PORK RIBS
Makes 2 servings.
- 1 full slab pork side ribs 1
- ½ cup Dry Rub 125 mL
- 1 pkg wood chips 1 pkg
- 1 smoker box (from hardware store) 1
Rub ribs thoroughly with ½ cup Dry Rub. Place in refrigerator for one hour. Soak wood chips in water for 20 minutes. Drain water, place chips in the smoker box. Place smoker box under left or right side of barbeque grill; turn on medium heat (300 degrees F) only on the side where the smoker box is placed. Place meat on opposite, unheated side. Turn the ribs a few times for even cooking. Watch the grill for flare-ups so meat is not burnt. Cooking time is approximately 4 to 4 ½ hours. Pull 2 ribs apart to check if done. Meat will have a pink colour from the smoke (a smoke ring).
