Suggested Beer Pairings: Light Lager, Amber Ale

Comments: The ligher flavoured beers will allow the delicate flavours of the artichokes and goat cheese to be accented while cutting through the creamy cheese. The amber ale flavours will bring out the sun dried tomato flavours and also compliment the heavy tomato sauce. Sun-dried Tomato and Goat Cheese
- 1 Flatbread base (Can be bought at Rocky Mountain Flatbread Store)
- 3 Tbs Heavy tomato sauce (Can be bought at organic food store)
- 6 Tbs Shredded mozzarella
- 2 Tbs Thinly sliced artichokes (add salt, pepper and garlic)
- 4 Tbs Sliced mushrooms
- 2 Tbs Soaked sun dried tomatoes julienne
- 3 Tbs Crumbled goat's cheese
- 1 Tps Roughly chopped cilantro
Directions
Take your flatbread base, evenly distribute the tomato sauce. Do the same with the mozzarella cheese. Add sliced mushrooms after the artichokes and the sun dried tomatoes. Crumble goat's cheese over the flatbread and sprinkle cilantro on top, making sure all the ingredients are spread evenly over the flatbread. Put on the barbeque slow heat for 12 - 17 minutes. Cheese should be melted and base crispy brown - enjoy.
