Tidewater Coleslaw Dressing - House of Q

Suggested Beer Pairing: Lager, Flavoured Ale

Examples: Red Truck Lager - Red Truck Beer Company, Central City Premium Lager - Central City Brewing, Whistler Special Export Lager, Natureland Organic Lager - Pacific Western Brewing, Kitsilano Maple Cream Ale - Granville Island Brewing, Rickard's Honey Brown, Raspberry Wheat Ale - Central City Brewing, Lemon Ale - Russell Brewing Company

Comments: Lighter tasting beers usually work well with salad, the carbonation in the beer will cut through the mayonnaise but still allow a person to taste the salad. Flavoured ales will add sweetness to the salad and let a person taste the fruit or sweet flavours in the beer.

This recipe is based on a recipe in Ron Shewchuk's book titled Barbecue Secrets . House of Q has added our own variation to the recipe - it's your call, which you prefer.

  • 1 1/2 cup Mayonnaise
  • 1/2 cup White vinegar
  • 1/3 cup White sugar
  • 1 TB Toasted cumin seeds
  • OR the House of Q variation replace with 1 TB Celery seeds
  • 2-3 lbs mixed shredded cabbage and carrots

Mix well in a bowl with a whisk and store in the refrigerator. Toss with your slaw and rest at room temperature for 20-30 minutes before serving. Try not to mix your slaw with the dressing too far in advance - the cabbage gets soggy!
